Last year, I didn’t dig all of the Jerusalem artichokes that I grew and left some in the ground. Then they grew into many of them and I could harvest a lot this year, as well.
I didn’t do anything. Nothing at all. I didn’t apply any fertilizers, I didn’t do any weeding, and I didn’t water them.
They are very powerful plants.
It is said to be good for diabetes since it reduces blood sugar levels and you can eat it raw, too.
I cut it into thin slices and mixed them with sesame oil, black sesame seed, and salt.
